Today is National Clam Chowder Day

Ingredients:

1/4 cup cut-up bacon or salt pork

1 medium onion, chopped (1/2 cup)

2 cans (6.5 oz each) minced or whole clams*

1 medium potato, diced (1 cup)

1/2 teaspoon salt

Dash of pepper

2 cups milk

 

Steps

1 In 2-quart saucepan, cook bacon and onion over medium heat, stirring occasionally, until bacon is crisp and onion is tender; drain off fat.

2 Drain clams, reserving liquid. Add enough water, if necessary, to clam liquid to measure 1 cup.

3 Stir clams, clam liquid, potato, salt and pepper into bacon and onion. Heat to boiling; reduce heat. Cover and simmer about 15 minutes or until potato is tender.

4 Stir in milk. Heat, stirring occasionally, just until hot (do not boil or soup may curdle).

Today in History: In 1570, Pope Pius V excommunicated Queen Elizabeth I of England for heresy and persecution of English Catholics during her reign, and absolved her subjects from allegiance from the crown. Catholics who obeyed any of her orders were threaten with excommunication. Queen Elizabeth response to this was followed: “ English subjects that wish to convert to Catholicism with ‘the intent’ to withdraw themselves from their allegiance to Elizabeth was a treasonable offence, that carried a death penalty.” During that same year, missionary priests from the continental seminaries secretly went to England in the cause of the “reconversion of England”. Many suffered execution, engendering a cult of martyrdom.

 

Lagniappe: Eight-year-old Lulu of Nashville, TN was 88-year-old Bill Dorris’ beneficiary when he passed away, leaving her $5 million, according to the Association of Mature American Citizens [AMAC]. The lucky dog – that’s right, Lulu is a border collie – was, indeed, Dorris’ best friend, says Martha Burton. Dorris did a lot of traveling during his lifetime and Burton looked after the pup when he was away and so he designated her in his will to be the dog’s care giver. A conservator, who is managing Dorris’ estate reimburses her for the costs of Lulu’s care. It is very unlikely that those costs could possibly use up the dog’s inheritance although Ms. Burton jokingly told a reporter that she’d like to try.
