Fun Fact: Fettuccine was created by an Italian restauranteur. Alfredo di Lelio’s concern for his pregnant wife’s lack of appetite in 1908.

According to bonappetit.com, Real alfredo should never (never!) include cream; the silky sauce is the result of an emulsion between the grated cheese, melted butter, and starchy pasta water. Its recipe is available at https://www.bonappetit.com/recipe/fettuccine-alfredo
